Spicy Tofu Bites with Seasonal Slaw

We’re big tofu fans in our house and these quick & easy spicy tofu bites are a go-to for weeknight dinners. Paired with a seasonal slaw (gotta get those veggies in), we often add rice or potato fries to bulk up the meal – but feel free to get creative with your sides!

Tofu (originated from china), also known as bean curd in, is prepared by adding an acid to soy milk and then pressing the curds created by this process into solid white blocks of varying softness; it can be silken, soft, firm, extra firm or super firm.

With us posting this in January we wanted to use as many seasonal ingredients as possible, to lower our carbon footprint in this recipe.

Tofu:

1 block firm tofu

1 tbsp soy sauce

2 tbsp vegetable oil

2 tbsp nutritional yeast

1 tbsp cornflour

½ tsp cayenne pepper

½ tsp smoked paprika

 

Seasonal Slaw:

1 carrot, grated

½ red onion, finely sliced

1 apple, quartered & finely sliced

½ small red cabbage, finely sliced

2-4 tbsp vegan mayo

2 tbsp lemon juice

Salt & pepper to taste

 

1.       Pre-heat oven to 200c

2.       Cut tofu into bite sized cubes and add to a large mixing bowl

3.       Add soy sauce & vegetable oil and mix until tofu is coated

4.       Sprinkle nutritional yeast, cornflour, cayenne pepper & paprika over tofu and mix again until tofu is covered.

5.       Line a baking tray with a silicon sheet or parchment paper and spread the tofu across the tray.

6.       Bake for 15 minutes, then flip the cubes over and bake for a further 10-15 minutes until crispy.

7.       While tofu is baking, prepare & combine vegetables for your seasonal slaw in a large mixing bowl. Add vegan mayo, lemon juice, salt & pepper and mix until fully incorporated.

8.       Serve & enjoy!
