Vegan Chocolate Chip Cookies

What could be better than the giant, chewy, cookies we all know and love? You guessed it – vegan giant, chewy, gooey cookies! This quick & simple recipe will be sure to see you through Veganuary & beyond, it’s certainly become a staple in our house and so easy to change up. Whether you want to add some sweet spices, nuts or fruit, there really is a lot to play around with here. So, let’s get stuck in with the OG: chocolate chip cookies.

Ingredients:

Vegan

Makes 12 cookies

120g vegan butter

150g caster sugar

240g plain flour

1 tsp vanilla essence

1 tsp baking soda

½ tsp salt

100g dark chocolate chips

2-3 tbsp vegan milk of choice

 

1.       Preheat the oven to 180C/350F degrees and line a large baking tray with greaseproof paper or non-stick matt.

2.       Cream vegan butter and caster sugar with an electric whisk or by hand until thoroughly combined.

3.       In a separate bowl, combine flour, baking soda & salt and gradually add to the butter & sugar. Mix by hand.

4.       Once thoroughly incorporated, add chocolate chips and continue to mix by hand.

5.       Add your chosen vegan milk and mix until a dough is formed. Roll dough into 12 balls and place on a baking tray. Lightly flatten the cookies with a fork or spoon before placing them in the oven.

6.       Bake for 12 minutes and allow to cool for at least 10 minutes to get that perfect, chewy texture.
