Roasted Sprouts with Tofu Bacon

Both of us here at gwafuvegan HQ have been vegan for many years at this point. We’ve witnessed the much welcome rise in vegan alternatives, especially at Christmas time. However, we’ve also witnessed the movement be continuously hit by the “vegan tax”, making it harder to justify some high-end items. So, when we were looking to recreate one of Hayley’s old Christmas favourites: sprouts and chorizo, we thought we’d give it a frugal twist!

Love them or hate them, sprouts are inescapable this time of year. Roasted Sprouts and Chorizo is a classic dish that saw Hayley through the seemingly endless Christmas party shifts of their early twenties in Manchester’s bustling restaurant scene – one bite, and the woes of spilt prosecco and bad-mannered customers seemed to melt away. But how can she possibly get back to her humble bowl-a-day when vegan chorizo is so expensive? Enter: Ngwafu’s crispy tofu bacon! Read on for our delicious vegan bacon and roasted sprouts recipe for a festive treat that won’t break the bank.

Roasted Sprouts with Tofu Bacon

Serves: 3-4

Prep time: 15 minutes

Cook time: 35 minutes

Ingredients

Tofu Bacon:

400g firm tofu, sliced

150g soy sauce

30g vegatable oil

1 tbsp golden syrup

1tsp paprika

1/2 tap garlic powder

Roasted sprouts:

200g Brussell sprouts, halved

½ red onion, sliced

2-4 garlic cloves, depending on preference, sliced

2 tbsp vegetable oil

1-2 sprigs fresh rosemary

½ tsp salt

1 tsp black pepper

Method:

1.       Pre-heat oven to 180c/gas mark 4. Place tofu on a chopping board and chop into ½ inch slices.

2.       Combine soy sauce, oil, syrup, paprika and garlic powder in a bowl, until a smooth marinade is formed. Dip the tofu slices into the marinade and allow to absorb for at least 20 minutes.

3.       While the tofu is marinading, prepare vegetables: wash and slice sprouts in half, and finely slice red onion and garlic cloves.

4.       Combine vegetables in a baking dish with oil, rosemary, salt, and black pepper, and put to one side.

5.       Once your tofu has been marinading for at least 20 minutes, warm a frying pan over medium heat and gently cook the tofu slices for 3-4 minutes on each side, remembering not to overcrowd your pan.

6.       Slice fried tofu into bitesize pieces and add to baking dish.

7.       Mix your tofu bacon and veggies, then place in the centre of the oven for 35-40 minutes, or until sprouts are golden brown.

8.       Enjoy and impress with this delicious take on sprouts!
